Gemüsebrühe / vegetable broth

Wer viel kocht, kommt um die Gemüsebrühe nicht drum herum. Eintöpfe, Suppen, Curry, Chili - die Gemüsebrühe ist in meiner Küche ein fixer Bestandteil. Vor allem seit wir unsere Ernährung auf vegetarisch umgestellt haben. Nun gibt es auf dem Markt ja viele Möglichkeiten von guten Firmen Instantpulver für Gemüsebrühen zu bekommen. Geschmacklich und inhaltlich unterscheiden sich die guten Marken wenig, allerdings sind auch die besten Instantbrühen industriell gefertigte Produkte und von den frischen, natürlichen Zutaten nur mehr ein schwaches Abbild.

 

Ein Kochbuch, das ich kürzlich geschenkt bekam, hielt für mich die Lösung parat, eine instant zubereitete Gemüsebrühe aus frischen Zutaten zu erhalten. Da wir die meisten der dafür notwendigen Zutaten immer zuhause haben, war ich sofort neugierig, wie sich die Grundlage für eine schnelle Gemüsebrühe herstellen ließ - und vor allem: wie sie schmeckte.

 

So viel sei vorab verraten: sie schmeckt großartig, duftet herrlich und ab nun halte ich immer ein Glas davon im Kühlschrank vorrätig.

 

Das Rezept für selbst hergestellte GEMÜSEBRÜHE:

 

150g Karotten

150g Porree

100g Knollensellerie

50g Petersilienwurzel

50g Staudensellerie

2 Knoblauchzehen

1 rote Zwiebel

1 Bund Petersilie

1 Bund Schnittlauch

1 Bund Liebstöckel

60g Salz

 

Das Gemüse waschen, Knollensellerie, Knoblauch und Zwiebel schälen und alles in grobe Stücke schneiden. In einer Küchenmaschine zerkleinern, bis es püriert ist. Mit dem Salz gut verrühren und in ein steriles Glas füllen. Im Kühlschrank ist die Paste rund sechs Monate haltbar.

 

Zur Herstellung der Gemüsebrühe verwende 1 Esslöffel der Gemüsepaste auf 100ml heißes Wasser.

Who cooks a lot, will definitely need vegetable broth on a regular basis. Stews, soups, curries, chili - vegetable broth is a permanent feature in my kitchen. Especially since we switched to vegetarian diet. There are many good quality instant vegetable broths on the market. The good ones don't differ much from each other in taste and ingredients, but no matter what: the best instant broths are factory-made and only a weak reflection of the fresh and natural ingredients.

 

 

 

A cookbook, which I got as a present most recently, offered a solution for an instantly prepared vegetable broth from fresh ingredients. Most of those ingredients are always on stock at our home and I was so curious to find out, how to prepare the basis for a quick vegetable broth - and most of all: how would it taste.

 

 

So much in advance: it tastes great, it smells wonderfully and from now on I will always keep one glas of it on stock in the fridge.

 

The recipe for a homemade VEGETABLE BROTH:

 

150g carrots

150g leek

100g celeriac

50g parsley root

50g celery

2 garlic cloves

1 red onion

a bunch of parsley

a bunch of chives

a bunch of lovage

60g salt

 

Wash the vegetables, peel the celeriac, the cloves and the onion and cut everything roughly. Mix all together in a food processor, until it is mashed all through. Stir in the salt and fill the paste into a sterile glas. Keep it in the fridge, it will be good for up to six months.

 

To produce vegetable broth use one tablespoon of vegetable paste for 100ml hot water.
